Low-Carb Green Desserts for Your St. Patrick's Day Party

It's time to party! Don't worry if you don't have time to prepare desserts. Most of these recipes are so simple that a 10-year-old can probably pull off. And the best thing is these are all low-carb desserts, so you can indulge yourself for one night and won't look like a whale the next day.

Green Jello Salad

Ingredients

  • 1 sm. box sugar free lemon Jello
  • 1 sm. box sugar free lime Jello
  • 1 c. boiling water
  • 1/2 c. diet sour cream or plain yogurt
  • 1/2 c. low fat cottage cheese
  • 1 lg. can crushed pineapple, no sugar added

Preparation

Dissolve both boxes of Jello in boiling water. Add other ingredients including juice of pineapple. Refrigerate.

Pistachio Pudding

Ingredients

  • 1 c. mini marshmallows
  • 1 c. nut meats
  • 9 oz. Cool Whip
  • 1 (20 oz.) can crushed pineapple
  • 1 (3 3/4 oz.) package pistachio pudding

Preparation

Mix the first four ingredients together, then add 1 (3 3/4 oz.) package pistachio pudding. Blend.

Mint Chocolate Chip Ice Cream

Ingredients

  • 2 cups 2% milk
  • 2 cups heavy cream
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 3 drops green food coloring
  • 1 cup miniature semi-sweet chocolate chips

Preparation

  1. Stir together the milk, cream, sugar, salt, vanilla extract and peppermint extract until the sugar dissolve. Color to your liking with the green food coloring.
  2. Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. After about 10 minutes into the freezing, add the chocolate chips. After the ice cream thickens, about 30 minutes later, spoon into a container, and freeze for 2 hours.


Green Apple-Lime Sorbet

Ingredients

  • 4 tart green apples (1 pound total)
  • 2 cups unsweetened apple juice
  • 1 tablespoon fresh lime juice
  • 1 tablespoon minced candied ginger
  • 4 sprigs fresh mint

Preparation

1. Peel, core, and thinly slice 3 of the apples. Set the other aside to use as garnish.

2. In a blender, mix the apples, apple juice and lime juice, and process until smooth. Add the ginger and pulse just to mix.

3. Transfer to an ice cream maker and freeze according to the manufacturer's directions.

4. Thinly slice the remaining apple. Spoon the sorbet into chilled bowls and garnish with the apple slices and mint sprigs.

Great dessert ideas for St. Patty's day! I'm not much of a jello fan, well i guess i just don't like "things" in my jello, but i really like the pistachio pudding recipie and the green apple-lime sorbet was great. I actually made this, but forgot (had a few too many with friends :) ) it was in the freezer for saturday. But I made up for it Sunday, and it's actually nice little treat when you're feeling a bit hung over...who knew
