A Healthy, Delicious Baked Chicken Parmesan Recipe!

When you think Italian food, you think sauce, cheese, pasta, and unfortunately, you might think a lot of calories and fat. Luckily, by using different cooking methods, you can make an easy, just as delicious healthy baked chicken parmesan recipe.


Ingredients for Healthy Baked Chicken Parmesan

The fresher the ingredients, the better tasting and better for you this chicken parmesan recipe will be! Fresh basil, fresh garlic, a flavorful sauce, and high quality chicken breast make this recipe an incredible dinner entree.

Ingredients:

  • 3 lean, trimmed chicken breasts (use kitchen shears to remove fat pieces easily)
  • 2 Tablespoons of fresh chopped basil
  • 1 cup Italian breadcrumbs
  • 2 Tablespoons olive oil
  • 2 beaten whole eggs
  • Fresh homemade marinara sauce (see recipe)

Directions

Quickly dip and batter this chicken parmesan recipe, then throw it in the baking pan for an easy dinner!

  1. Preheat an oven to 400 degrees. Rub the bottom of a glass cooking pan lightly with olive oil, or use fat free cooking spray to lubricate the bottom and prevent sticking
  2. In two separate bowls, place the breadcrumbs and beaten eggs. Dip each piece of chicken into the egg, then lightly toss into the breadcrumbs. 
  3. Arrange the chicken in the baking pan. Bake for approximately 30 minutes, or until the chicken's internal temperature is 165 degrees (and the chicken is no longer pink when cut).
  4. Top the chicken pieces with lowfat or fat free mozzarella cheese, depending on your preference. Bake for another 10 minutes, or until the cheese melts. Typically, low fat cheese melts well, while fat free cheese may have difficulty in melting. Use sparingly to save on calories, and top with extra marinara and vegetables for a filling, healthy dinner!

I always use fresh garlic, but tend to skimp on the fresh basil. I know it makes food taste better, so I am going to try and change my ways! The chicken parm recipes looks yummy.
