How to cook steamed morel mushrooms with brandy sauce?
59Ingredients: 1. 20 nos morels. 2. 300 gm chicken liver. 3. 200 gm butter. 4. 100 ml brandy. 5. 100 ml chicken stock. 6. 30 ml white wine 7. 50 ml cream. 8. 100 gm peeled cocktail onion. 9. 10 gm sugar 10. 200 ml white wine vinegar. 11. Liver paste
Method and preparation:
1. Clean liver minutely and soak in milk. 2. In a pan, with lots of butter, sauté liver and then blend, finish with of butter, brandy. 3. Stuff the pre soaked morels with liver paste. 4. Seal the mouth of the morels with a toothpick and steam for 2 minutes and ensure that mixture does not come out. 5. Take little butter and add stock and brandy with it, deglaze with white wine, add a little bit of cream, serve on the top of steamed morels.
Accompaniment In a pan, add white wine vinegar and sugar and slowly cook the cocktail onion until the color is almost pink and cooked.
