Kopi Luwak is probably the most exclusive night drink in the world. How does it taste? Unmistakeable spicy, sweet, simply awesome in the cup. Coffee Luwak or "Kopi Luwak" as it is called, comes from the islands of Sumatra, Java and Sulawesi, which are among the 13,677 islands of the Indonesian archipelago. On these Indonesian islands lives a small marsupial, and called by the people as Luwak, which lives in the trees and like the family of civet.
Long time ago, they were treated by the natives as pests, as they were climbing up the coffee trees and then only eat the ripest, dark red coffee cherries. After the animals have eaten the cherries, the eaten cherries are digested and ultimately eliminated. Some people eventually came up with the idea to collect the beans, after the digestion process is almost entirely unaffected, as they still indigestible by the parchment skin protected.
The enzymes in the stomach of the animals seem to be something unique to the aroma of coffee through this very special fermentation process. The stomach acids and enzymes are very different from the normal fermentation of Arabica coffee which are usually washed in the water. Kopi Luwak has a very good flavor, a remarkable record in the process of fermentation.
