These days they are not so prolific, even though you can still find jars of pickled eggs in the supermarket.
Those supermarket pickled eggs aren’t the best I have tasted though and pickled eggs are really easy to make so if you like them or are just curious enough to try them why not make up some of these pickled eggs recipes.
Have them on the table as a snack with crisps, French bread and cheese when settling down in front of the TV to watch the game.

- 1 dozen hard boiled eggs
- 4 small celery sticks (with leaf)
- 1 teaspoon salt
- 1 teaspoon black peppercorns
- 1 teaspoon caster sugar
- Cider Vinegar

Peel and rinse the hard boiled eggs carefully then put them gently into a wide necked jar.
Push the celery onto the glass for decoration.
Add the salt, peppercorns and sugar, then top up with the cider vinegar making sure that all of the eggs are covered.
Store the pickled eggs for two weeks before opening.
The tradional pickled eggs should keep for at least six months.

- 1 red onion
- 1 stick celery
- 3 sprigs rosemary
- ¼ teaspoon chilli powder

- Beetroot vinegar

These blushing pickled eggs make an interesting addition to a salad at any time of year.
The beetroot vinegar for the pickled eggs is easy to make, just stand two baby beets in distilled malt vinegar overnight to give a really rich red shade.

Peel the eggs carefully and let them stand in fresh, cold water.
Don’t use any of the eggs whose yolk is exposed or the vinegar will go cloudy and look really unappealing.
Slice the red onion, leaving the slices whole, and chop the celery.
Put 3 eggs into a wide necked jar followed by a sprinkling of celery.
Push the onion slices and rosemary against the side of the glass jar for a nice decorative effect and hold them in place with the next layer of eggs and celery. Continue with the layers until the jar is full.

- 1 teaspoon caster sugar
- Distilled white vinegar
