The Joys of Cooking Salmon

Salmon has been discovered to be one of the healthiest types of fish you can eat. It doesn't have a "strong" fishy flavor which lets it be paired wtih many types of other foods, and it's firm texture makes it easy to cook for beginning fish chefs.

Salmon is most often cooked as a fillet (a thin cut down the side of the fish with no bones) or a steak (a cross-section of the fish). Recipes can be as simple as some pepper and olive oil sprinkled on, or they can feature fancy sauces.

In addition to being a good lean source of protein, salmon is also rich in omega-3 fatty acids, found to boost good cholesterol and decrease the bad form. These polyunsaturated fats have been found to help with heart disease, arthritis and other inflammatory conditions.

Please take just a moment and educate yourself on why you should buy wild-caught and not farmed salmon and why we need to support environmental efforts to protect our salmon resources.

Salmon is easily broiled or grilled, just sprinkled with a touch of salt and pepper and drizzled with a little olive oil.

Salmon with Roast Garlic Topping

This is my favorite way to cook salmon!

Ingredients:

  • 1 head of garlic, medium size

  • 1/4 C. olive oil

  • 1 1/2 tsp. butter

  • 4 salmon flllets, about 6-7 oz. each

  • 2 tsp lemon juice, fresh-squeezed

  • 2 tsp rosemary, fresh-chopped

How to Prepare:

  1. Pre-heat the oven to 400 degrees.Separate the garlic into cloves and peel. Put these in a small baking dish and pour enough olive oil over them to cover them. Wrap the dish in two layers of aluminum foil and bake for approx 30 minutes. The cloves should become nice and tender.

  2. After you remove the garlic, increase the oven temp to 450 degrees to pre-heat for the fish.

  3. Use a slotted spoon to fish the cloves out of the oil and put them into a food processor. Add about a tablespoon of the oil they were baking in, and the butter. (The remainder of the garlicky oil is nice served with a crusty bread for dipping as an appetizer). Puree the garlic, butter and oil, then season with salt and pepper to taste.

  4. Put the salmon on a baking sheet. I like to oil it slightly, put down a lettuce leaf, or a piece of baking parchment to keep the fish from sticking. Salt and pepper each fillet, then drizzle generously with lemon juice. Spread garlic puree evenly over the fillets.

  5. Bake until salmon is cooked through, approximately 15-20 minutes. Sprinkle with rosemary and serve. (I like to serve it over greens, rice or mashed potatoes).

One of my favorite is when small whole wild salmon is available. This simple receipe goes great with rice, fresh green beans and crusty bread.

In an oven save dish just big enough for the fish with head and tail removed, melt one stick of butter. Place salmon in dish and in oven at 350. Turn over in 10 minutes and cook till done (depends on size).

Serve with the melted butter as the sauce and it goes great on the rice or to dip the bread in.

The Smokey Bones restaurant chain serves grilled salmon. It is served with a tangy sweet glaze. I have been unable to duplicate the flavor. Do you know how the chain prepares their glaze.

Hi Relache,

Salmon is my all time favorite fish here in the Pacific Northwest, and I am always looking for good recipes. Thanks for a great site, and thanks also for mentioning the need to forego farmed salmon.

All fish farming is an ecological disaster and a nutritional disaster, too. So, I encourage people NOT to eat farmed fish, and to insure that the world's wild fish stocks are managed carefully.

Great Hub

I love salmon done up in a smoker, cooker.

I agree that we need to protect our wild salmon. However, I don't agree that we should stop salmon farming as an industry. The whole issue revolves around the farmed salmon escaping into the wild and spreading disease.

I saw a program on some of the methods they are trying to develope to contain the farmed fish. That is where the problem lies. When some one figures that out, there shouldn't be a problem.

Actually, JMHO, fish farming can be really unhealthy for the fish who are raised there. What would be best for everyone is sustainable usage of our natural oceanic resources, not just manipulating supplies for culinary fashions.

Unfortunately Atlantic Farmed Salmon which you find in most stores and many restaurants does not have the health benefits of wild caught salmon.
