A Delicious Southwest Salad in about 15 minutes
The other night I experimented with some ingredients and was pretty pleased with the results. If you're craving a salad, this can be ready to eat in about 15 minutes. Just follow the steps below.
Quick Notes
- The measurements I used made about 3-4 adult sized servings
- The chicken will take the longest, so get that started first

What you need
- Lettuce - I used about half of one fresh head of red leaf. I read somewhere that this is the most nutritious lettuce you can eat, aside from spinach.
- Fresh Tomatoes - I used two fresh roma tomatoes and diced them up, but any type of tomato would work
- Chicken Breast- Two breasts grilled for about 10 minutes on the barbeque. You could also broil if you prefer, just make sure they don't get too dry
- Black Beans - I used one can of whole black beans
- Corn - If you've got time, you could throw corn on the bbq along with the chicken to make it even more fresh. I just used a can of whole kernel corn (no salt added)
Optional: Salad Dressing - I used a little bit of caesar, but it was also good without any. Ranch or any kind of pesto would probably be good as well.
Throw it all together
First you will need to rinse lettuce thoroughly and tear it up into bite-size pieces. Tomatoes will also need to be diced. Once the chicken is ready, cut into small pieces.
Find a large bowl and dump everything into it. Toss and enjoy!
