Stuffed Mushroom Recipe - Vegan

 

This is a great main dish for two and very nutritious. Serve with green salad. Low calorie too only about 200 per serving.

Preheat oven to 350 F

Fast and Easy Stuffed Mushrooms

2 large whole portabella mushrooms

1 slice bread (I use oat bread, but any will do)

1 oz Feta Cheese

1 oz Parmesan cheese

3 TBS fresh parsley leaves

1 thin slice onion

Wash mushrooms. Remove stem and pat dry.

Place the rest of the ingredients and stems into food processor bowl. Pulse 8 to 10 times until mixture is fine and crumbly.

Place mushrooms (top down) on ungreased cookie sheet. Place bread crumb/cheese mixture into mushrooms and bake for 15 to 20 minutes.

Nutrition Information:

Protein: 10 grams (includes all amino acids); Carbohydrates 8 grams; fats 18 grams;

Good source of Calcium, Riboflavin and Selenium.
