Would you like to have something new and delectable with your Thanksgiving Day dinner? You have to answer yes to a question like that, right? Well, for your Thanksgiving Dinner side dish this year, please try this recipe for "Roasted Cauliflower with Parmesan Cheese". We usually have three vegetables at our dinner. Two are always corn, roasted carrots and then we try and come up with a new side dish each year. This year, our new Thanksgiving dinner side dish will be this cauliflower recipe.

What I like is that it is easy to prepare, requires only a few ingredients and can roast in the oven while the turkey is resting before you carve it. It is tasty, develops a deep, nutty flavor and looks positively warm and inviting. Here comes the what, when and how.

The What:

  1. One head of fresh, white cauliflower.
  2. 1 Tbsp. Olive Oil, any kind.
  3. 1/2 tsp. kosher salt.(please buy a box of kosher salt..it works so much better than table salt)
  4. 1/2 tsp. freshly ground black pepper.
  5. 2/3 cup grated Parmigiano-Reggiano cheese. If unavailable, regular Parmesan is OK.

The When:

After you take the turkey out of the oven, increase the temperature to 450 degrees F.

The How:

  1. Break the head of cauliflower into florets. This is simple and quick and can be done ahead of time.
  2. Combine all the ingredients except the Parmesan cheese into a large bowl and mix.
  3. Layer onto a flat baking sheet.
  4. Put into the 450 degree oven for 15 minutes until golden brown.
  5. Remove from oven and transfer to serving dish.
  6. Add the Parmesan cheese and toss to mix.
  7. Enjoy as a side to your picture perfect turkey.

If you do not have a turkey on your dinner table at Thanksgiving, this side goes well with a baked ham, any roast or even fish.

When you try the roasted cauliflower with Parmesan cheese, you may never go back to cauliflower as you knew it before.You can even make this recipe more low fat by using shredded low fat cheddar cheese instead of the Parmesan.
