Ingrediants:
11⁄2 pounds boneless, skinless chicken breast, cubed
(1-inch)
1 cup reduced-sodium fat-free chicken broth
1⁄2 cup dry white wine or chicken broth
1/4 cup balsamic vinegar
8 ounces small mushrooms, halved
6 plum tomatoes, chopped
1/4 cup halved Greek or black olives
3 cloves garlic, minced
1 teaspoon each: dried rosemary and thyme leaves
Salt and pepper, to taste
Method:
Combine all ingredients, except artichoke hearts, olives, salt, pepper,
and feta cheese, in slow cooker; cover and cook on high 4 to 5 hours, adding
artichoke hearts and olives during last hour. Season to taste with salt
and pepper; sprinkle each serving with feta cheese.
