Delicious Baked Eggplant Sandwiches Vegetarian Dish

Ingredients:

2 tablespoons vegetable oil

1 medium eggplant (about

2-1/4 pounds)

7 tablespoons pizza sauce

7 slices mozzarella cheese

(about

5 ounces)

2 eggs

1/3 cup low-fat milk

1/3 cup dry bread crumbs

1/3 cup chopped fresh parsley

Instructions: This is definitely a sandwich to be eaten with a fork! Eggplant slices replace bread slices in these hot pizza-flavored sandwiches. Spaghetti sauce can be used in place of the pizza sauce.

Heat oven to 400 degrees. Brush 1 tablespoon of the oil on bottom of rectangular pan, 13 X 9 X 2 inches. Cut eggplant into twelve 1/2-inch slices. Spoon 1 tablespoon pizza sauce onto each of 6 eggplant slices. Top each with 1 slice cheese (cut or fold cheese to fit if necessary) and remaining eggplant slices.

Beat eggs and milk. Mix bread crumbs and parsley in shallow dish. Dip each sandwich into egg mixture, then into crumb mixture, turning to coat both sides. Press crumb mixture into and around edges to coat entire sandwich.

Place sandwiches in pan. Drizzle with remaining oil. Cover pan with aluminum foil. Bake 20 minutes. Remove foil and turn sandwiches. Bake uncovered 15 to 20 minutes longer or until sandwiches are golden brown and eggplant is tender. 6 servings

Secrets To Eating Healthy Food As A Vegan

If you have lived most of your life as a vegan, Growing up with my parents and other family, I was served fresh meat items more than fruit and vegetables

. I decided as young as I was that vegetarian was the way to go. When I became of age, got married and fathered three children, I decided to try to become a full vegan, even with much disgust of the people around me. I became ill due to lack of nutrition that the foods I was eating and the little  knowledge of vegan foods and what was needed to stay healthy.

It seemed like everything around me contained animal bi-products. Although it was 20 years ago and now I have perfected the "Art of Eating Healthy as a Vegan" I have spent many hours and days researching and testing recipes and also sharing my experience with others, so they too can be happy and healthy.

Living healthy is not just a choice, it is an "Act" of choice. The way that we choose to live in this world full of dangerous chemicals, unknown substance and mysterious elements.

When people first see me, they say "you look to healthy to be a vegan" There is not a day that goes by that I have to or decide to say the word "vegan" Whether for clarity's sake, before I buy some chocolate or to share something about my life as a vegan to someone I had just met.

Alot of people seem to be under the misconception that vegetarians and vegans are under-nourished and too skinny, full of sickness and without energy. This can certainly happen if you don't look after yourself properly and eat healthy.

Do you know many people that actually are true vegans? People that really live the art of "Healthy Eating". We put into our mouths, what we become. I can relate to this because in many different ways. "We are is what we eat" However I really believe that every person needs to understand and decide what their body needs at every moment of the day. You should not just eat for pleasure.

Pleasure has much to do with our choice of foods, but we need to truly look at  the other reasons why we eat! "Energy & Health" our driving force in living. "Food" very much has a huge bearing on how we act and what we do on a daily basis. There is an old saying that we must put gas in the car so it can run for another 500 miles, it simply means that we must fuel our bodies so we can function for the rest of the day. Do we want to Simply function or do we want to be energised and full of life for the day? Which one would you choose?

Living as a healthy vegan does not mean that you need to miss out on delicious meals, great desserts and perfect snacks, life as a vegan can be healthier and more satisfying than you can ever experience. When you truly practice the "Art of Healthy Eating as a Vegan" you will never look back. You will wonder why you ever followed such a Rocky Path.
