Easy Vegan Broccoli and Garlic Mashed Potatoes
62An easy way to jazz up your standard vegan mashed potatoes!
Want a break from the same old plain, boring, mashed potatoes? Mix it up with a few simple ingredients from your pantry! This one is also a real life-saver during cold and flu season because garlic and onions serve as natural immune system boosters, while broccoli is bursting with vitamin C.
You'll need:
4 large potatoes
medium stalk of broccoli
6 sections of garlic
1 medium onion
1-2 tbsp vegan margarine
1/4 cup plain almond milk (or soy/rice/hemp milk if prefered)
olive oil
Directions: Cut potatoes into small wedges and boil or steam in a steamer until soft. While these are cooking, you can be steaming your broccoli. You will want to slightly overcook the broccoli to allow for easy mashing later. Next, in a medium sized sauce pan, cook chopped garlic and onion in olive oil until onions are clear. Once cooked, add potatoes and broccoli to the pan along with almond milk and margarine. Some may want to try adding a vegan sour cream like Tofutti. Mash with masher until smooth. You may add more milk to obtain the desired consistancy.
