In the case of the espresso the coffee granules that are being used are the smallest and hence this factor plays a very important role in greatly reducing the extraction time.

The main factor that plays a major role in defining the taste of the coffee is the contact time between the coffee particles and the water and the lesser time is given for these two to join together the more will be the final taste that can be achieved in the case of the coffee. On the other hand the more time is given for the particles of coffee and the water to stick together the bitter will be the taste of the coffee produced from it.

Thus if the coffee granules are bigger then the more time will be required for the extraction of the coffee and this will subsequently result in the lessening of the coffee taste.

This lessening of the flavor of the coffee can be very much be attributed and is due to the reason of the under extraction of the coffee particles and hence this should be very well avoided if one needs to drastically improve the quality and the flavor of the coffee that they make.
