Homemade Ice Cream with my Dad

One of my fondest memories or my childhood is in making homemade ice cream with my Dad. He didn't do it often,because it always seemed to make a mess. So when Dad made home made ice cream it was a real treat. Dad was the one who would mix it all up and he was always creative with different recipes and such. But we favored good ole fashion vanilla. He would mix up the delicious cream and then put it in the center of the old fashioned ice cream maker. Then he would add the crushed ice and the rock salt.

We used an old fashioned wooden ice cream maker that we had to crank with our hands. There were 5 of us kids and we would each take a turn churning the ice cream. So we all felt like we were part of "making it". It seemed like hours and hours. Finally it would be ready.

It never failed. No matter how slowly we tried to eat it, we always ended up getting an "Ice cream headache". But I guess that was part of the fun.

Now it's a Wooden Electric Ice Cream Maker

Now a days, I make homemade ice cream with my 3 kids. But this generation uses an electric ice cream maker. We can have yummy ice cold cream in about 20 minutes or less!

There is nothing better than home made ice cream. I just have one warning....Eat it slowly because if you don't you will get brain freeze!

For a really special treat, My Dad would make home made waffles and we would have waffles with ice cream. Yummy!

Easy Low Carb Ice Cream

I've been eating a low carb diet for the last few months and discovered a simple recipe that I wanted to share with you.

  • 2 cups of full-fat heavy whipping cream
  • 2 eggs
  • 2 ts vanilla
  • 1 tablespoon of stevia

Mix everything in a blender or you can put it directly in the ice cream canister and mix with a stick blender. That's it! It is super easy. For chocolate, simply add a bit of cocoa powder. Then simply follow the recommendations of your ice cream maker.
