Most plants classified as 'succulents' will grow very well in poor soil. There are very attractive sedum that fit the bill. They also thrive on neglect, and are not fussy or demanding. Succulents prefer dry growing conditions as well. Most sedum are perennial, and will return each year.
Herbs also benefit from average soil, and most do not like a lot of fertilization either. Many herbs have wonderful flowers to enjoy in the garder, or as a bouquet for the home. There are plenty of herb varieties that are also perennial, and can be enjoyed for many years to come.
