Cooking From Scratch - Cold Pasta Salad
Cooking from scratch is a great way to save money in the kitchen. Cold pasta salad is a very easy dish to make from scratch. If you don't walk in the door until dinner time this is a great recipe to make the night before and it is ready when you get home. It has everything you need in a dinner - carbs, dairy/protein, and vegetables. Best of all - the kids even love it.
1 lb of rotini pasta, but other shapes will work well too
1/2 package of pepperoni
1 can of plain tomato sauce
1/2 can of black olives
1 small onion
2 oz mozzarella cheese
Cook the pasta as directed on the box. While this is cooking you can dice the pepperoni and cheese, slice the olives and chop the onion. When the pasta is done, drain it and run cold water over it until it is cooked. Now you just need to mix all the ingredients together in a large bowl and chill.
I serve this pasta with whatever rolls I have on hand, sometimes I make homemade. Of course you can have more veggies on the side as well; corn or canteloupe would go well. I frequently take this dish to potlucks or picnics. It travels well and I find it easier to keep things cold rather than hot.
