Easy Baps

Quick and easy to make using easy-blend yeast, these are delicious for breakfast or with a savoury filling.

Makes 8

150 ml milk

150 ml water

50 g butter

225 g wholewheat flour

225 g strong white flour

1 tsp. salt

1 tsp. sugar

7 g packet of easy blend yeast

Heat milk, water and butter gently until butter melts; cool to lukewarm. Mix flours, salt, sugar and yeast in large bowl, add milk mixture and mix to a dough. Knead 5 minutes, put into a bowl, cover and leave in a warm place for about 1 hour, until doubled in bulk. Set oven to 220 C, gas mark 7. Knock back dough, knead briefly. Divide into 8 pieces, form into smooth rounds, dust with flour and place well apart on a floured baking tray. Cover and leave in a warm place for 15 – 20 minutes, until well risen. Bake for 15 – 20 minutes. Cool on a wire rack.
