Egg and Bacon Pie

Eggs have many uses, not only are they part of many recipes, but egg dishes also offer some great variations. One can tire of scrambled eggs or omelettes, but the following give a few useful and tasty extra ways to enjoy eggs.

These are great as a main meal, or as a cold snack

Egg and Bacon Pie

Ingredients

½ cup melted butter

¾ cup self raiding flour

1 ½ cups milk

4 eggs

1 cup grated cheese

3 tablespoons fried crisp bacon

Seasoning, carrots, peas, mixed vegetables (optional)

Method

Beat the butter, flour, and milk together with the eggs. Add the grated cheese and the bacon, and if you wish, seasonings, and grated carrots, peas, act. Put the mixture into an oven proof dish and cook in the oven at 350F (180C) for 30 minutes.

Serves 4-6

Frittata Pottatta

Ingredients

2 tablespoons butter

2 tablespoons olive oil

1 diced onion

2 small cooked and diced potatoes

1 small sliced tomato

1 slice, diced ham

1 tablespoon fresh herbs (oregano, sweet basil)

8 eggs

Salt and pepper to taste

Method

Melt half the butter and olive oil together in a large skillet. Add the onion and cook until soft over low heat. Add the potatoes and coat with olive oil and butter. Stir in the herbs, ham and the tomato. Beat the eggs in a bowl and pour into the pan. Add salt and pepper to taste. Cook only until the bottom is firm. Coat the top with butter and put under the broiler until the top sets and is golden.

Alternatively combine all the ingredients and cook in a casserole dish in a moderate oven.

Serves 4-6

Tropical Scrambled Eggs

Ingredients

4 eggs

½ cup milk

½ freshly squeezed orange

1 small mango or pawpaw

Method

Crack eggs into bowl, whisk in the milk.

Squeeze in the orange juice. Drop the mixture on the hot skillet, use spatula and move around as it thickens,. When half done add slices of mango and or pawpaw and continue cooking until done.
