Ground Beef Recipes are Easy to Prepare and Easy on the Budget

Because ground beef comes from less tender parts of beef, it is cheaper compared to prime beef cuts. Ground beef also the trimmings from the tender parts, fatty parts included.

Tough meat is tenderized though grinding. The inclusion of fat reduces the dry appearance and enhances the taste of ground beef meat.

A word of caution: meat is exposed to bacteria during grinding, so ground beef should be cooked within 2 days after purchase. Or have it wrapped tightly and frozen completely. Of course, product should come from a trusted source.

Also, bacteria can cross-contaminate. They can be present on utensils and hands. To prevent the spread:

  1. Do not recycle the raw meat container,
  2. Practice strict hygiene in the kitchen and to all equipment, and
  3. Never put cooked food on used plates.

Always thaw frozen ground beef inside the fridge overnight, if you plan to cook it the next day. Do not leave frozen meat at room temperature to avoid bacterial build-up.

Here are some quick-to-cook ground beef recipes to satisfy and to delight your palates!

Favorite Sloppy Joes

This is a cook's all-time favorite recipe. Also perfect for snacks and picnics. Quick and simple to prepare, but very delicious! Yields 12 servings.

Ingredients:

  • 2 pounds of ground beef
  • ½ cup of onion, chopped
  • ¾ cup of chili sauce
  • ½ cup of water
  • ¼ cup of mustard
  • 2 teaspoons of chili powder
  • 12 hamburger buns, split into halves
  • 12 slices of Cheddar cheese

Procedure:

  1. In a Teflon pan, cook ground beef over medium heat, until brown. Sauté onion until softened. Remove excess beef fat.
  2. Stir in chili sauce, water, mustard, and chili powder. For 30 minutes, simmer without cover to reduce liquid. Stir at regular intervals to avoid sticking.
  3. Carefully scoop beef mixture onto each bun. Spread a slice of cheese on top. Serve hot.

  • 2 pounds of lean ground beef

Procedure:

  1. Preheat the grill to high heat.
  2. In a bowl, combine together the ground beef, ranch dressing mix, egg, crushed crackers, and onion. Mix well, but do not over-mix.
  3. Scoop burger mixture on palm and gently form burger patties, with your fingers.
  4. Brush oil on grill grate. Arrange burger patties on hot grill, and cook for 5 minutes on each side; or until well done.

Ingredients:

  • 1 pound of lean ground beef
  • 1 ½ tablespoons of ketchup, or to taste

  • 1 tablespoon of distilled white vinegar
  • 1 small onion, finely minced
  • ½ small green bell pepper, finely minced

Procedure:

  1. Preheat grill to medium-high. Brush oil on grill grate.
  2. In a large bowl, mix well together ground beef, ketchup, mustard, Worcestershire sauce, vinegar, onion, and bell pepper. Do not over-mix.

Bake your own buns to create extraordinary hamburger sandwiches! Yields 25 buns.

Ingredients:

  • 2 cups of milk
  • ¼ cup of margarine, softened
  • ¼ cup of warm water
  • ¼ cup of white sugar
  • 2 packages of instant yeast (¼ ounce weight)
  • 2 teaspoons of iodized salt
  • 6 cups of all-purpose flour, or more

Procedure:

  1. In a mixing bowl, combine together milk, margarine, warm water, sugar and yeast. Set aside for 5 minutes.
  2. Mix in salt. Add flour in small amount until soft dough is formed. Transfer on floured surface and divide into 25 pieces; or less if bigger buns are desired.
  3. Form each piece into ball and arrange on baking sheets, 3 inches apart. Put in a warm place and let rise for 20 minutes.
  4. Preheat oven to 375 degrees. Bake for 15 minutes. To make golden-topped buns, remove buns from oven after 12 minutes, brush tops with evaporated milk, return to oven, and bake for another 3 minutes.
  5. Split into halves and serve with home-cooked burger patties, cheese, lettuce, tomato slices, and onion rings.

Not the usual grilled burger recipe-but easy-to-prepare! Yields 10 burger patties.

Ingredients:

  • 5 pounds of lean ground beef
  • 6 tablespoons of Worcestershire sauce
  • 2 tablespoons of hickory seasoning (optional)
  • Salt and ground pepper, to taste
  • 2 cups of onion, minced
  • 2 cups of fresh mushrooms, minced
  • 2 cups of cooked ham, minced
  • 3 cups of shredded Cheddar cheese

Procedure:

  1. Preheat grill to medium-high. Brush oil to grill grate when hot.
  2. In a large bowl, blend together the ground beef, Worcestershire sauce, hickory seasoning, salt and pepper. Do not over-mix.
  3. Divide beef mixture into 20 pieces; and form into balls. Put balls on lightly-greased platter, and flatten with the tips of your fingers.
  4. Spread onions, mushrooms, ham, and cheese on top of 10 patties. Cover with remaining patties. Press the two patties together, and slightly pinch the edges to seal.
  5. With the use of flat spatula, carefully transfer the burger patties on hot grill. Slightly lower the heat to avoid burning. Cook each side for 8-10 minutes; or until meat is well done. Melted cheese should ooze out when pricked with fork.
  6. To serve: put in between two slices of toasted wheat bread and cut at the center to show off the yummy stuff inside the burger. Or serve it just like an ordinary hamburger sandwich.

Procedure:

  1. In a Teflon pan, cook ground beef over medium heat until slightly brown. Sauté onion. Remove beef fat. Stir in tomato sauce, tomato, Worcestershire sauce, salt, Italian seasoning and ground pepper. Bring to a boil.
  2. Cover and simmer sauce over medium-low heat for 15-30 minutes.

Ingredients:

(For meatballs)

  • 1 pound of lean ground beef
  • 1 cup of fresh bread crumbs
  • 1 tablespoon of dried parsley, chopped
  • 1 tablespoon of Parmesan cheese, grated
  • ¼ teaspoon of ground black pepper
  • 1/8 teaspoon of garlic powder
  • 1 whole egg, beaten

(For spaghetti sauce)

  • ¾ cup of onion, finely chopped
  • 5 cloves of garlic, finely minced

  • 2 cans of whole peeled tomatoes (28 ounce weight)

Ingredients:

  • ½ cup of ketchup
  • 2 teaspoons of brown sugar
  • 1 teaspoon of dry mustard
  • 1 package of sausage roll recipe
  • 1 pound of lean ground beef
  • ¼ cup of onion, chopped
  • 1 whole egg, beaten
  • 1 teaspoon of iodized salt, or to taste
  • 1 cup of quick-cooking oats
  • ¼ teaspoon of ground black pepper, or to taste

Procedure:

  1. Preheat oven to 350 degrees.
  2. In a bowl, blend together ketchup, brown sugar, and mustard. Separate one third cup of ketchup mixture.
  3. In a large bowl, combine together sausage roll recipe, ground beef, onion, egg, salt, oats, pepper, and 1/3 cup ketchup mixture. Mix well, using wooden spoon.
  4. Form beef mixture into a loaf and arrange on baking dish.
  5. Bake for 1 hour, remove from oven, and pour the remaining ketchup mixture all over loaf. Bake for another 10 minutes.
  6. Cool off for 5 minutes. Use a sharp knife to make clean-edged slices. Serve hot.

  • 1 pint of part-skim ricotta cheese
  • ½ cup of grated Parmesan cheese
  • 2 tablespoons of dried parsley, chopped
  • 1 teaspoon of iodized salt, or to taste
  • 1 pound of mozzarella cheese, shredded and divided into 2 parts
  • 2 tablespoons of grated Parmesan cheese

American Lasagna

An all-American lasagna recipe! Can be cooked overnight and packed tomorrow for easy pick-up. Just re-heat in oven to enjoy a zesty and savory dinner. Yields 8 servings.

Ingredients:

  • 1 ½ pounds of lean ground beef
  • 1 piece large onion, finely chopped
  • 2 large cloves garlic, finely minced
  • 1 tablespoon of fresh basil, chopped
  • 1 teaspoon of dried oregano, chopped
  • 2 tablespoons of brown sugar
  • 1 ½ teaspoons of iodized salt, or to taste
  • 1 can of diced tomatoes (29 ounce weight)
  • 2 cans of tomato paste (6 ounce weight each)
  • 12 pieces dry lasagna noodles
  • 2 whole eggs, beaten

Procedure:

  1. On Teflon pan, brown ground beef over medium heat. Sauté onion and garlic, until soft. Spoon out excess oil. Stir in basil, oregano, brown sugar, 1 ½ teaspoon salt, diced tomatoes and tomato paste. Reduce heat to medium-low and simmer sauce for 30 to 45 minutes. Stir at intervals to blend flavors well while cooking. Divide beef sauce into 3 parts.
  2. Preheat oven to 375 degrees.
  3. Boil water in a large pot. Add a small amount of salt and vegetable oil. Remove cover when water is in rolling boil and put the lasagna noodles. Cook for 5 to 8 minutes. Use strainer to drain. Carefully lay cooked noodles on towels to dry.
  4. In another bowl, combine together eggs, ricotta cheese, ½ cup Parmesan cheese, parsley and 1 teaspoon salt. Divide into 2 parts.
  5. Lay 4 lasagna noodles on surface baking dish (9 x 13 inches size). Spread evenly the ½ ricotta mixture, ½ mozzarella cheese and 1/3 part of beef sauce. Lay another 4 lasagna noodles and repeat distribution of the ricotta, mozzarella and beef sauce. Lay on the last 4 lasagna noodles. Pour all the remaining beef sauce and scatter the 2 tablespoons of Parmesan cheese on top.
  6. Bake for 30 minutes. Cool for 10 minutes. Serve hot.
  7. To pack one serving per container: cool completely and put inside the fridge. Cut into serving portions the next day. Don't forget to put re-heating instructions on label.

Sweet N Sour Meatballs (from Allrecipes)

  1. In a bowl, blend together egg, onion, cornstarch, salt, and ground pepper. Using your fingers, separate ground beef over the mixture and mix well. Form balls with 1-inch size.

These beefy and juicy meatballs are great appetizers on the party table-or a satisfying viand over steaming rice.

Ingredients:

(For meatballs)

  • 1 whole egg
  • 1 medium onion, finely minced
  • 1 tablespoon of cornstarch
  • ½ teaspoon of salt, or to taste
  • ½ teaspoon of ground black pepper, or to taste
  • 1 pound of lean ground beef
  • 2 tablespoons of vegetable oil

(For sauce)

  • 1 can pineapple chunks (20 ounce weight), not drained
  • 2 medium green bell peppers, cut into strips
  • ½ cup of sugar, or to taste
  • 3 tablespoons of cider vinegar
  • 1 tablespoon of vegetable oil
  • 1 tablespoon of soy sauce
  • 3 tablespoons of cornstarch
  • 1/3 cup of cold water

  2. Heat ¼ cup of shortening or oil on Teflon pan over medium heat. Add meatballs one by one. Use cooking thongs for easy turning and picking the balls. Cook for 5 to 7 minutes, or until browned. Drain on paper towels.
  3. Pour chili sauce and jelly into the pan over low heat. Continue stirring until jelly is melted.
  4. Return meatballs to the pan. Carefully turn over and over until whole balls are coated. Do not cover pan. Simmer for 30 minutes, on very low heat.
  5. Serve glistening hot and arranged like a small hill on a shallow platter. Provide mini-sticks to skewer meatballs.

Ingredients:

  • 1 ¼ pounds of ground beef
  • 3 cloves garlic, finely minced
  • 1 whole onion, finely diced
  • 1 can of diced tomatoes
  • 1 cup of shredded Cheddar cheese
  • 1 ½ cups of chicken broth (or dissolve 1 chicken bouillon in 1 ½ cups of warm water)
  • 6 pieces whole bell peppers (large size)

Procedure:

  1. Preheat oven to 350 degrees.
  2. Cook ground beef on large Teflon pan over medium-high heat, until brown. Reduce heat to medium-low. Using the wooden spatula, gather crumbles of ground beef to one side. Scoop out excess beef oil.
  3. Sauté garlic until golden. Add onion and cook until transparent. Stir in tomatoes. Simmer for about 3 minutes. Sprinkle cheese over mixture and stir until well-blended. Remove from heat and set aside.
  4. Wash and drain the peppers. Using a sharp knife, cut the tops off but keep the stems on. Carefully remove seeds and veins from the inside of bell peppers.
  5. Spoon cooked ground beef mixture into the peppers. Add in some chicken broth, arrange in muffin baking tray, and put on the tops of bell peppers.
  6. Bake in preheated oven for 30 minutes. Serve hot.

These baked cheeseburgers are good news to diet-watchers. Less fat but tastier, even kids would love them!

Ingredients:

  • 2 packages active dry yeast (¼ ounce weight)
  • ½ cup of warm water
  • ¾ cup of warm milk
  • ¼ cup of sugar (baking variety)
  • ¼ cup of shortening (preferably vegetable oil)
  • 1 whole egg
  • 1 teaspoon of iodized salt
  • 3 ½ cups of all-purpose flour (separate 2 cups)
  • 1 ½ pounds of ground beef
  • ¼ cup onion, finely chopped
  • 1 can of tomato sauce (8 ounce weight)
  • 8 slices of American cheese, cut into quarters

Procedure:

  1. In the mixing bowl, dissolve yeast in warm water.
  2. Add milk, sugar, shortening, egg, salt, and 2 cups flour. Beat until creamy. Sprinkle remaining flour and continue beating, until flour mixture turns into soft dough.
  3. Transfer dough onto floured surface. Using both hands, knead dough for 4-6 minutes or until dough turns stretchy and elastic. Form into a flat ball and roll inside a greased bowl once, just to grease top and bottom. Set aside in a warm place, cover with cheesecloth and let rise for about 30 minutes, or until size has doubled.
  4. In a Teflon pan over medium heat, cook ground beef until meat is no longer pink. Stir in onion until softened. Drain oil and add the tomato sauce. Simmer for 5 minutes. Remove from heat and set aside.
  5. Take back dough onto floured surface. Divide into 16 parts. Roll out and spread each piece to form circles with 5-inches diameter.
  6. On each circle, arrange 2 pieces of cheese and 3 spoonful of beef mixture. Carefully wrap the circle of dough around the filling. Pinch the edges to seal. Arrange on lightly-greased baking trays. Set aside in a warm place, cover and let rise until size has doubled; or about 20 minutes. Preheat oven to 400 degrees.
  7. Bake for 8-12 minutes. To make delightful-looking buns: remove from oven after 7 minutes, brush the tops with evaporated milk, and return back to oven. You will know that the buns are cooked when brushed milk has turned golden and shiny. Serve warm.
  8. To serve as packed snack: cool completely before packing. Put re-heating instructions on label.
