Noodle Soup with Minced Ham


300 g fresh noodles

1 tbsp. olive oil

1 ginger slice

½ tsp. wine

600 ml. chicken stocks

2 tbsp. minced ham

100 g green vegetables


  1. Bring ½ wok of water to the boil and blanch the noodles. Remove, rinse and drain.
  2. In a large saucepan, heat the oil and sauté the ginger until pungent the discard.
  3. Pour in the wine, sizzle, then add the chicken broth and shredded ham. Bring to the boil, add the noodles and simmer for ½ to 1 minute for noodles to heat through, then divide noodles into individual bowls.
  4. Blanch the vegetables in the remaining broth, then remove and arrange in the bowl with the noodles. Pour the gbroth over the noodles and serve hot.
