½ kilo ground chicken
6 tbsp. chopped water chestnut
1 tbsp. soy sauce
1 tbsp. dry sherry
2 cloves garlic, minced
2 slices freshly chopped ginger
2 tsp. cornstarch
½ tsp. margarine
Special Sauce (see below)
For meatballs, mix together the chicken, egg whites, water chestnuts, soy sauce, sherry, garlic, ginger, and cornstarch.
Shape into 1 ½ inch balls for entrée-size servings.
Brown in nonstick pan with margarine. Transfer to shallow baking dish.
Pour Special sauce over it and bake in a 35 F oven for 10 minutes.
Makes four entrée servings. Contains about 215 calories per serving.
Special Sauce: Mix together three tbsp. unsweetened pineapple juice, 1 tbsp.
soy sauce, 1 ½ tbsp. catsup, 2 tsp. vinegar, 1 clove minced garlic, a few drops of sesame oil, and 1 slice fresh ginger.
