Stir-fried Bean Sprouts with Salted Fish

Ingredients:

3 tbsp. oil

4 tbsp. thinly sliced salted fish

1 clove garlic, diced

250 g bean sprouts, rinsed

1 spring onion, cut into lengths

Generous sprinkling of white pepper

Procedure:

Heat the oil in a wok over medium heat and stir-fry the salted fish until golden brown and crisp, about 5 minutes. Remove from the oil and drain on paper towels.

Reheat the oil until smoking hot and stir-fry the garlic for a few seconds, then add the bean sprouts and stir-fry over very high heat for 30 seconds. Add the fried salted fish and spring onion, and stir-fry for another 30 seconds; the bean sprouts should be just wilted but not soggy. Do not over cook.

Transfer to a serving dish, sprinkle white pepper over the dish.

Serves 4
