In my experience, hiking is primarily trudging through the wilderness trails exploring a large area and enjoying the beautiful scenery.
Once you've worn yourself out by walking many miles, you stop for the day to find a suitable place to set up your tent, start a fire, and prepare for dinner. The next morning your pack up and head out on the trails again.
On the other hand, if you're primary focus is on camping, you don't do a lot of marching through the trails. You pretty much find one central location to set up camp and stay there anywhere from one night to several days.
