
I am a real Professional Chef that lives in Las Vegas. I am lucky that right when I finished my apprentiship under Jean Louis Palladin that I was assigned to the High Roller Suites @ the RIO. I gained a vast knowledge of cuisines right away. I had Whales & Celebrities from all over the world to please. I have cooked for some of the sweetest & sincere individuals to..well, we all know this (the kind of people your not even allowed to look at). I can't brake anonymity because of privacy clauses in my contract but I can share stories of some Celebraties I have found to be quite different than you would expect in person. I am sure they won't mind because it is all positive. So don't expect a gossip gab from me. I am not one of the Celebrity Chef's you are used to seeing on Television because a True Chef.. Like Jean Louis Palladin does not care for the Media. I was discovered by him @ the Flamingo Hilton( I was a female line cook in the coffee shop and that is a whole story on its own) He saw the passion in my eyes as I was slinging hash as they call it and noticed how much I really enjoyed the sweating, the stress, the wonderful..Servers(OK not so wonderful)the excruciating heat of 120 degrees(and yes the temperature inside, I know Las Vegas is Hot but we do have Air conditioning inside), the yelling, the flames, & the camaraderie among us line cooks(a breed of their own). He saw a stressed out 28 year old..I was cute back then. He told me later before he passed away what he saw back then & it was truly so typical Jean Louis, A beautiful rising star in the sky that really believed and had the passion to present a dish with the utmost care & delicacy he had seen in a long time. He believed in me and that is what still gives me the strength some days to be patient with my clients. I cook the same as I do for my family I am passionate about what I serve them, it must be healthy, great tasting & tweaked to my palate with superb blend.
