If it's not a surprise I would just ask her or bring her along.
If it is a surprise maybe ask her about family heirlooms and if someday if you had kids would you want them to be passed on to get a feel for whether she has a family ring in mind.
Everybody loves Raymond had an episode where she loses her ring, you could maybe talk about that to bring up the subject.

Some stores have a return it policy or an exchange policy. You could propose with a promise ring and ask that you two pick them out as a couple.
She likes you and probably trusts your taste, I'd give it a shot. It's a good sign that she hasn't given you a menu of what to buy that she may care more about having you then some ring.

Find a way to trick her into going to the store and trying some rings on. If anything, tell her you're looking for some jewelry for someone else (friend or family for example). Then slowly make your way to the rings and pick her brain (Don't make it obvious that you're planning to propose soon though)

First of all, you should know what your fiance/e likes or dislikes. You can choose a gold or platinum ring with a diamond depending on her preference. Put a budget and shop around with him/her and choose out the best
