Read. If it's a business trip, I read a business book I've been putting off but really wanted to get to but if it's leisure I pick a novel I haven't had time for. Using this method was sub-conscious at first but really works well, keeping me in the mood for the upcoming trip. If I’m on my way home, I read simple things allowing me to decompress from the trip.

Hello
I was in a cafe in Hanoi and noticed four young ladies at a nearby table helping each other to wind wool into balls. I was fascinated and asked them what they were doing. They were leaving Hanoi by bus that night and because it is a very long trip, each young lady planned to knit herself a scarf!

When i'm traveling for pleasure, I spend lots of time with my ipod. On a long bus/train/flight I like to make a playlist of songs that match the emotions i'm feeling with the environment i'm in. Later, that playlist becomes a souveneir of sorts and provides vivid memories of your travels...for me at least.

Sleep (really is useful).
Write articles (hubs?) or summaries for future articles.
Do paperwork.
Plan what you are going to do on the destination :)

Take photographs and notes about the things you are seeing. There is always a chance to use it for an article later, a blog, or simly a way to refresh your memory later. If you have kids, use the time to do a learning game. Search for letters in signs or license plates to work with alphabet. Road kill bingo or the "slug bug" game to promote an awareness to your surroundings. Hunt for plates from different states to help learn their states. And there is always the wonderful, often overlooked chance to simply sleep.
