In Curriculum Vitaes should we include Previous Employer Contact details

Never include previous employer's contact details. Although you may want to use them as a reference, you need to be in control of the timing of the contact with your previous employer.
Always offer to provide the names and contact details of references 'on request'. This means you can forewarn the previous employer that they may be contacted, but you can also tell them about the new job and suggest what they might say if and when they are contacted.
