The best way to peel a tomato is to boil a pan of water. Place your tomato(s) in the boiling water for about two minutes. Then put the tomato into cold water. This will cause the skin to break and will make it easy to peel the tomato. All you need to do now is take a knife, catch the edge of the skin where it is splitting and gently pull it off. You can the use the tomatoes for whatever you desire including canning, cooking, and even eating!

my dad actually had reactions from the acid in the tomato peel. we ate a lot of salads at our house and i peeled every tomato - every time. i was 12 before i realized that usually you don't peel tomatoes when you are using them fresh. it takes a very sharp paring knife and a little patience to get between the skin and the fruit but once you're good at it you can peel it like an apple - with one long peeling left behind. if you're using it cooked, par-boil it and the skin will slide off.
