Did you mean "insufficient" instead of "excessive"? I have never heard of anyone complain about excessive cabinet space. The complaints are always about not enough.

Well first of all I don't think there is such a thing as "excessive cabinetry" unless you are one who likes the visual of neatly lined up packages and cans and filled containers etc. I have done a lot of moving and the kitchen is the very first thing I tackle. I imagine a day in the life of working in that kitchen. What will I use most? What will I use least? Where will I unload and store groceries? what is heavy?(pots and pans). What cabinet is closest to dish washing? If you ask yourself some simple and practical questions the answers will be obvious. When it comes to aesthetics those can come after you have your basics done with organizing. In the next few weeks you can tweak it. You want to be able to work in your kitchen efficiently and quickly as possible. If you have an eat-in kitchen then aesthetics may be more important than in a simple galley. Obviously the things you use most you will want to put within handy reach. A big roaster, for instance, which you would only use on occasion could be set in a hard to reach cabinet very high or low.

If you like the visual of stored items you can remove cabinet doors and maybe finish them off with some molding or curtains. Good luck
