I've been to NY and seen all the tourist sites and found the best shopping and theaters.
What else should I see or do?

Go to different neighborhood ethnic festivals.
Go to different neighborhoods (preferably in the company of a knowledgeable friend from that neighborhood).
Ride the Subway. For no reason at all. People Watch.
Go to Brooklyn and take a class in How to Remove Street Signs; take another class in Graffiti.
Go to the Statue of Liberty and Ellis Island.
Take the Staten Island Ferry across New York Harbor.
