Any muffin can be made healthier and fat-free by substituting apple sauce or prune puree for the fat. Apple sauce and prune puree give the muffins the same taste and texture as fat does; but, the muffin is fat-free; has more fibre; has more vitamins and minerals; and is better for you.
I use this technique myself and love it!
