In Grand Rapids, there's a great restaurant off of Wealthy St called Marie Catrib's near East Grand Rapids. The dishes are a totally unique blend of American, Mediterranean, and Lebanese cooking styles. Most of the menu is vegetarian and has some of the most vegan options I've seen in Grand Rapids. Not to mention, the food is incredible!
