How can something that looks and feels like water possibly be so powerful? Is it magic? No, it is electrolyzed water. What you ask is electrolyzed water? Electrolyzed water, EO or EOW, is also commonly referred to as "activated water".
If you have been reading along with us, you know that one of our mantras in food safety is "clean is not sanitized".
Food and chemicals can be a dangerous mix and yet, sanitizing is often necessary for our protection. How Does Electrolyzed Water Work?
So how does this process work? Essentially, a small electrical charge is passed through softened water in a chamber that serves to produce two ionized solutions with negative and positive charges respectively.

Electrolysed water (EOW or EO, also known as electrolyzed oxidizing water, electro-activated water or electro-chely activated water solution) is produced by the electrolysis of ordinary tap water containing dissolved sodium chloride. The electrolysis of such salt solutions produces a solution of sodium hypochlorite, which is the most common ingredient in store-bought household bleach.

Benefits of Activated Water EO or EOW
So in practical terms, why is activated water so great? For one, it can deliver large facilities, such as hotels and hospitals, a significant return on investment by saving costly dollars on cleaning chemicals. To date it is a better fit for commercial applications than the home due to size and cost.
But activated water is not just about dollar savings, it is also about safety.
But is activated water a good sanitizer?
Some articles have stated that side by side comparisons have been researched and activated water has proven to be more effective and more efficient. I am anxious to review and disect those reports to truly determine its effectiveness in an apples to apples comparison.
Additionally, the sellers of activated water have contended that sanitized floors have resulted in better traction and greater safety. I have not experienced this myself - I am simply relaying the information.
New Technologies for Hospitals and Hotels
In short, corporate America, especially hotels and hospitals, have a duty to review this new technology and its many applications for their facilities. And then, maybe one day, we, the household consumers, will have the same access to sanitized surfaces in our homes.
How is Activated Water Being Used Today?
Hospitals are using electrolyzed water to fight a nasty germ called MRSA. MRSA is a difficult strain of bacteria that is often resistant to chemical sanitizers. Additionally, hospital staffs like using electrolyzed water because it doesn't have that ammonia or aggravating chemical smell.
Hotels are using electrolyzed water to keep costs down while still qualifying as a green hotel.
Both hospitals and hotels use the water-like solution, a natural sanitizer to clean floors and other hard surfaces.
Electrolyzed water is also great on glass. It doesn't smear and yet it cleans streak-free very effectively.
Home Test - Completely Unofficial
I recently used electrolyzed water to clean half of the bird bath out in our garden. Amazingly, the recurring mold appeared mainly on one side of the bird bath.
Note, this is NOT a claim, it is simply one household experiment, nothing formal but from this test you can see firsthand the power of this natural cleaner and sanitizer.
In the near future I plan to repeat this experiment with photos tracking the changes and with a complete cleaning on both sides using different cleaners.
Why did I share this rough experiment? Because I hope some hotels who are using electrolyzed water start documenting the differences to educate us on the improvements they are experiencing.
How Does Electrolyzed Water Help Food Safety?
Food safety is all about preventing disease and food poisoning. Any time we can eliminate bacteria, we are naturally creating a healthier environment.
OK, I know I sound like Howard Hughes with his paranoia of bacteria. the fact is Mr. Hughes was far ahead of his time given his approach to germs.
Can Electrolyzed Water Be Used In Stead of Ammonia for Processing Beef?
One proponent of ammonia has challenged me on my articles regarding the use of ammonia on beef. For ammonia, I wish to be perfectly clear, I feel strongly we, the consumers, need to be informed. Any lack of disclosure is an afront to our intelligence. I fault the food manufacturer more than the government although the government's position is that it is a process not an ingredient. This is not a logical conclusion to me. You are talking about my health, the health of my family. I don't want to know - I NEED to know.
Likewise, I challenge Wal-Mart, the largest grocery store in the world, to demand disclosure from its suppliers. If we stand together as consumers and ask for disclosure, the retail giants and food manufacturers will have to comply. My opinion is that this isn't a government issue.
Food safety can only move forward if the consumer requests or perhaps even demands it. The green movement or "eco-friendly" started because of you. The consumer has the largest vote in the entire world.

Costs and Benefits of Electrolyzed Water
Every circumstance is different, every property has unique requirements and needs. However, having stated that, even at the hefty price tag of $10,000 - $50,000, electrolyzed water for many large facilities offers pay backs of under two years and sometimes less.
It Is Not All About ROI
The return on investment is only part of the equation. The cost savings from chemical fumes and harshness on the skin are a small part of the equation to the quality of life of preventing germs. Electrolyzed water offers the benefit of staff feeling comfortable sanitizing.
If you are like me and have attempted to sanitize a bathroom with a chemical that you felt would suffocate you in that tiny space, you can understand how employees would be appreciative of this new technology. Electrloyzed water is safe and effective. Preventing illness and injury is the goal of sanitizing, to be able to sanitize without chemicals is an analysis every large facility from hotel to hospital must closely consider.
