Extracts and flavorings are commonly used in baking and cooking to give extra flavor to the dishes. Extracts are highly concentrated versions of foods, fruits, herbs and spices. Vanilla is one of the more commonly used extracts, particularly in baking. Other extracts that are popular are those made from various nuts and liqueurs. These are both classic examples of products that would be impossible to duplicate without having an extract. The primary difference between extracts and flavors is that flavors sometimes contain ingredients other than the natural source of the flavor. The objective is to taste like the source, not to duplicate it. Extracts are taken directly from the source.
