Cake flour has much lower gluten content and a high starch content that is better able to interact with the sugar that goes into cakes and other bakery products. Another type of flour is semolina, which is made from durum wheat, which is the hardest wheat. Semolina is most often used to make pasta. In some cases grains other than wheat are used and these are referred to as ground meal. Corn and rice are common types of ground meal.
