We can … Keep Reading → create or buy marinades with many different flavor profiles. The second reason to marinate our meats is to tenderize them. Most meats we buy could use a little (or a lot) tenderizing so they are not tough when it’s time to eat. Marinades can be wet, which are usually based on some type of acid; or dry, which is usually a combination of herbs and spices. When using wet marinades (particularly on fish) it’s important to not marinate for too long; the proteins in fish break down very fast when using an acid based marinade.
