Bread made with yeast needs to allow time for the yeast to do its thing and make the dough rise. After the dough rises we can get our frustrations out by beating up the dough. This step is necessary to remove the air pockets that have formed. Then we put it in the oven and in a little while we are eating our amazing creation.
