One of the reasons that grilling is so popular is because the high intensity of the heat allows for the outside to be seared, while the inside remains rare and flavorful. This is very different from an oven, where the food cooks from the inside as well as the outside. Most grills offer the flexibility of being able to close the top to create an oven like environment. This allows for direct grilling as well as more “indirect” cooking methods.
