Many of the chefs had worked for the aristocracy that was no longer in power and opened restaurants in order to survive. American contributions to the history of restaurants include the automatic restaurants as well as restaurants that specialized in particular foods such as steak or seafood. In modern times most of the best restaurants are found in major cities such as Paris, New York, Chicago, and San Francisco.
