Contrary to some popular perceptions, Mexican cuisine does not have to be very spicy. While it certainly can be spicy, the food comes with many different flavors and levels of “heat.” Many Mexican dishes aren’t spicy at all. Corn is prominently featured in many Mexican dishes both as a primary ingredient and as a component in foods such as tortillas. Because of the popularity of simple foods such as tacos, Mexican cuisine sometimes gets labeled as not being sophisticated, but anyone who has eaten at a top quality Mexican restaurant would certainly disagree.
