The types of cuisine that are being “fused” are critical to determining what the style of the food will be like. A classic example of fusion cuisine is the world famous restaurant Nobu. Nobu is a restaurant that started in New York and has since expanded to other cities around the world. The food is a unique combination of Japanese and Peruvian cuisines. Many classic Japanese dishes are joined with spices and characteristics of Peruvian food to create a unique style. It isn’t Japanese and it isn’t Peruvian; it can only be classified as “fusion.”
