Strong influences of Greek cuisine can be found throughout Middle Eastern cuisine. The cuisine tends to be healthy with ingredients such as olive oil, eggplant, tahini, and chick peas being used in many recipes. Pita bread is commonly used to hold food as well as being served with meals. Cracked wheat is used as the basis for healthy dishes such as tabouleh, while beans are fried and ground up to create the traditional falafel. Meats are also popular with lamb being one of the favorites.
