Within the area of the south specific regions have their own distinct style. New Orleans, for example, is heavily influenced by the Cajun and creole style of hot and spicy food. Other areas of the country reflect their own influences. Many parts of the Northwest feature different kinds of fish that are common to the area. Similarly, areas of the East Coast such as the New England area feature the many types of shellfish that are found locally. Texas reflects its ranching tradition with a strong emphasis on meats in general, and beef in particular. Wherever you find yourself in America there is likely to be a type of cuisine that is specific to the area.
