Thai cuisine is heavily focused on fish as the main ingredient along with the rice. Many of the sauces are based on a combination of fish stock with popular local ingredients such as lemon grass, chili, ginger, garlic, tamarind, and coconut milk. Thai cuisine is typically cooked in a wok and the flavor profiles are often very hot and spicy. For those unfamiliar with Thai cuisine the level of spice may be surprising. Restaurants serving Thai food will often ask for the desired level of “heat.” If you haven’t tried the food before, go with the more mild versions; which often are not that mild.
