Sofrito.... sofrito is the main ingredient, the foundation to many latin dishes. If you don't have sofrito in your cooking then it will not have the authentic taste and smell of Caribbean food.
I have never used a slow cooker to make a pernil (pork shoulder) but one day I decided to try and I must say it came out fantastic. The meat melted right off the bone. My family loved it!!!!
