A restaurant's success can often be traced to an owner who pays attention to details. He knows the elements that appeal to patrons and will will encourage a patron to visit, stay and enjoy the experience. Neglecting just one or two of these essentials can contribute to a restaurant’s downfall.

Two important often overlooked areas fall into a single category defined as ambiance. According to Business Dictionary’s definition, ambiance means :The look and feel of a place (mall, restaurant, tourist destination, etc.) that evokes a unique atmosphere or mood and compels people to come and stay around.

As a person with years of involvement in the restaurant trade there are two specific areas that are often neglected today. Of course food is the most important but two areas are often neglected and can keep discerning customers from returning. Some of the younger customers who were raised in an atmosphere that consisted of fast food joints and low class offerings might not notice the obvious. But, they might someday when their income and tastes evolve. But for now, here is what so many restaurants miss out on.

Comfort entails details often neglected and disregarded.

Meals are to be enjoyed not just for the food, but for the total ambiance of the surroundings. Why punish a patron by seating him in a chair not built for comfort or by placing him in a room that sounds like a factory. A cushioned chair in a quiet room is just what the doctor order for satisfied customer.

Have you ever sat and squirmed through a meal totally uncomfortable and unhappy because of the chair set at your table? So often the task of selecting the furniture is left to someone with little or no experience in making this very important decision.

They might spend time choosing something very stylish and dramatic, undersized and totally inappropriate - everything but comfortable for the guests who will be using the chair. Frequently, the chair selected may come from a catalogue, never subjected to an actual comfort test, that allows people of varying sexes, weights, heights and configuration to evaluate it.

Ultimately a choice is made based on price and/or aesthetic appeal with little regard to comfort. Meanwhile customers rush through their meals. without lingering for profitable drinks and desserts in the rush to give their aching butts a rest. The next time a suggestion for a dinner spot is requested, those whose buttocks have not recovered, will certainly select another more comfortable spot.

The second area of concern are the acoustics of a restaurant. A huge part of an establishment's ambiance is determined by the ability to hold conversations at your table, without screaming at one another or turning up the volume on your hearing aids.

Why is That?

Ceilings are left unfinished - walls too- two elements that contribute to the distracting noise levels of a room.They serve as perfect surfaces to bounce sound waves off and reverberate through the space.. Those restaurants often have music blaring on the sound system and the room is filled with the clatter of dishware being bussed.

Patrons , especially the older ones learn to speed through meals, then head somewhere quieter, where their conversations can be enjoyed without the clamor and background noise. Our hearing is compromised and even hearing aids can't really sort out the cacophony of conversations that are bombarding us from all sides. That's where acoustics play a big role. Unless you deal in fast food, you will be seeing many of your older patrons leave fast.

And while we wre on the subject of noise, your speaker volume is usually set by some 18 year o;d who is accustomed to constant loud noise and ear buds, so one more detail: tone it down to a level that allows conversations to be enjoyed.

There was time a generation or so ago when proprietors sought ways to quiet their rooms. Acoustical tiles on ceilings and sound absorbing materials on walls and floors brought the noise level down.

Today, the money once spent to improve ambiance (there's that word again) is spent on unrelated decor, and other items that offer little improvement on a restaurant's appeal.

Bring back the old restaurants, the considerate owners and I will be back more often to partake of the food. Loud restaurants don’t cut it unless they are meant for the teenage sector. I am obviously well beyond that.

These are details that are fixable, especially at the beginning phase. Acoustical sound reducing tiles on the ceiling. Sound absorbing material on the walls and rugs on the floors can reduce noise and improve ambiance dramatically.

Select dining room chairs and bar stools for comfort. Try a hundred if you must, until you get it right. Comfort is the key to making your food more enjoyable.
