I noticed over the years when I would be low or almost out of eggs I could use less and the recipe would turn out fine so now when I have five chickens and need to use up eggs I still will use less for health reasons. If a cake mix calls for 3 eggs I use two and if it calls for 2 I will sometimes only use one. Now I am not sure I have done this on making from scratch recipes but most cake mixes already have a rising agent in them so I think that is why it is not necessary. How about you?

I do too and love it becasue most time we don't have what it calls for and I have to improvise.
When it comes to soup the sky is the limit. We always add new things and make all kinds. Nothing so good in winter with baked bread!

I am partially vegan but for health reasons I use honey or molasses in place of sugar.
Yes me too; well I probably would use more veggies and less meat but I do not like real spicy or hot spicy foods. Strange because I think hot sauce is just a have to on chicken nuggets before frying but I just put enough for great flavor not heat.
Very welcome; it is a way of reducing a little here and there we don't need. I cut back sugars too enough to count but not enough to hurt anything. Sweet is sweet!
I have never used more so I will take your word. I am wary of too many eggs if you can believe all you read about it being heart unhealthy.
I love them but their eggs can't hatch anyway so no pity there. lol

Well if you know the rum cake recipe worked I would not have removed it regardless! I hate bullies! Turning the cheek is one thing but taking stuff from bullies I do not think God intended.
Wow, Debra, we do have some bullies on HP. I'm sorry to hear that. What is it that we are told to substitute apple sauce to make the cake healthier. Is it oil? I always found the cakes dry when oils were skimped.
Yes, I have done the trick with using applesauce too. Cake and bread coes out delicious and moist.
A thing of necessity taught me I didn't need as much but health reasons made me keep it that way.
If you are given a recipe for health reasons (i.e. blood bressure, diabetes), then it must not be altered. Even as simple as cereal, milk and additives. Otherwise it does not matter, it will not harm you.
I've used extra eggs before. I haven't tried what you do Jackie. Next time I bake a cake I will give it a try.
