What is the best way to use red onions?

I rarely cook with them but I have a surplus I need to fix up. Any ideas?

That does sound great Rachel; I will have some tomorrow, need to pick up fresh cucumbers. I planted plenty but it has been so dry they did no good!

    Thanks!

Those do all sound good. I cooked them up (all but one large one) and will put them in soup today after it has cooked. I will take your advice on the one left over, thanks!
