Austria: Weiner Schnitzel, Mozart, and the Waltz

Fun Facts About Austria
Vienna's Zentralfriedhof (Central Cemetery) has over 2.5 million tombs (more than the city's present population), including those of Beethoven, Brahms, Gluck, Schubert, Schoenberg and Strauss.
In the 16th century, the Austrian Empire included Austria, Belgium, Czecho-slovakia, Hungary, the Netherlands, Spain, Spanish American colonies, parts of Italy and the former Yugoslavia.
A mummified body from thousands of years ago was found in the ice of the Otztal Alps, between Austria and Italy, in 1991.
PEZ was created in 1927 by Edward Haas in Vienna.
Famous Austrians include Ferdinand Porsche (the founder of 'Porsche' company), Gregor Johann Mendel (who established the basis of modern genetics), Josef Madersperger (inventor of the sewing machine), and many of the world's famous composers including Mozart, Haydn, Schubert, Liszt, J. Strauss, Mahler and Bruckner.
Cook an Austrian Meal
Tonight we're having Wiener Schnitzel (Breaded Veal) with lemon slices, a lettuce salad, french fries, apple strudel, and cranberry juice. (They drink elderberry juice in Austria, but cranberry juice is the closest I can get here. If you live near an IKEA, go there to find elderberry juice.)

Wiener Schnitzel (Breaded Veal)
- 4 veal cutlets (each about 5 oz.) pounded to 1/4 inch thickness (or use pork or chicken breasts)
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/2 cup breadcrumbs
- 2 eggs
- oil for frying
- lettuce salad and lemon slices (to accompany the meal)
- Heat at least 1/4 inch of oil in a pan to 350°F.
- Working one at a time, dredge cutlets first in flour until the surface is completely dry. Dip in egg to coat, allow the excess to drip off for a few seconds and then roll quickly in the breadcrumbs until coated. Do not press breadcrumbs into the meat. Place meat immediately in the pan with the hot oil. Do not crowd the pan. Cook the schnitzel in batches, if necessary.
- Fry the schnitzel for 3-4 minutes on one side. You may want to swish them around a little with your fork to make sure they are not sticking to the pan. Turn them over once and fry until both sides are golden brown. Remove from pan, allow the oil to drain off, place on a plate.
- Serve with a lettuce salad and lemon slices.

- 6 cups sliced and cored tart apples (I use Granny Smith)
- 3/4 cup raisins
- Grated peel from 1 lemon
- 3/4 cup sugar
- 2 teaspoons cinnamon
- 3/4 cup ground almonds (I use a coffee grinder for this)
- 8 ounces (1/2 a box) thawed phyllo/filo pastry (look for it with the desserts in the frozen food dept.)
- 1 3/4 cups melted butter
- 1 cup finely crushed breadcrumbs
- Mix apples with raisins, lemon rind, sugar, cinnamon, and almonds; set aside.
- Place 1 phyllo leaf on a kitchen towel and brush with melted butter.
- Place a second leaf on top and brush with butter again.
- Repeat until 5 leaves have been used, using about 1/2 cup of butter.
- Cook and stir bread crumbs with 1/4 cup of butter until lightly browned.
- Sprinkle 3/4 cup crumbs on the layered phyllo leaves.
- Mound 1/2 of the filling in a 3-inch strip along the narrow end of the phyllo, leaving a 2-inch border.
- Lift towel, using it to roll leaves over apples, jelly roll fashion.
- Brush top of the strudel with butter and sprinkle with 2 tbsp crumbs.
- Repeat the entire procedure for the second strudel.
- Bake the strudels at 400°F for 20 to 25 minutes, until browned. (This recipe came from food.com.)

Read a book about Austria
Also be sure to read a book about Mozart, who came from Austria, and listen to some of his music! Our favorite children's picture book about his life is Mozart: The Wonder Child: A Puppet Play in Three Acts by Diane Stanley. It includes quite a bit about his life, focusing on his childhood, but it is not too long that children lose interest in the story. It has wonderful illustrations so that even my youngest children enjoyed sitting through our reading of this book.
