The Dish Tracy Cooked With Mossman's Hollywood & Dine

Tracy McCool's Baked Ziti with Spinach and Tomatoes

3/4 pound Italian sausage, casings removed

1 medium onion, chopped

3 large garlic cloves, chopped

2 cans diced peeled tomatoes, 14 ounce

1/4 cup pesto sauce, purchased

10 ounces ziti pasta or penne pasta ( 3 cups cooked)

8 cups spinach leaves (about 2/3 of 10 ounce ready to use)

6 ounces mozzarella cheese, cubed

1 cup Parmesan cheese (about 3 ounces) grated

Heat heavy large saucepan over medium heat. Add sausage, onion and garlic and sauté until sausage is cooked through, breaking up meat with back of spoon, about 10 minutes. Add tomatoes with juices to pan. Simmer until sauce thickness slightly, stirring occasionally, about 10 minutes. Stir in pesto. Season sauce with salt and pepper. Preheat oven to 375. Lightly oil 13x9 glass baking dish. Combine pasta, spinach, mozzarella and 1/3 cup Parmesan cheese in large bowl. Stir in hot tomato sauce. Transfer mixture to prepared baking dish. Sprinkle with remaining Parmesan cheese. Bake until sauce bubbles and cheeses melt, about 30 minutes.

      Tracy..Without you TV 8 Live News would be without that insurmountable sufficient amount of human natural classic nobilty like aura which you pervail over the entire broadcast spectrum of live television in the Cleveland-Cuyahoga Cnty. arena. No broadcast entity can sustain its viewing power without a serious classic and highly developed mentality and conscious posture as you have cultured. Let it be known any broadcast or communications entity who attains you will immediately evolve into a higher form of human intellectual interchange.

      Tracy--I was wondering what the contact information is regarding the segment on credit ratings, credit cards, credit card consolidation, etc...which aired on Wednesday at noon ? I have emailed Fox 8 and received no response. Thanks for your help.

      Hi Tracy - love you guys - watch you everyday! I have a different twist on the Ramen Noodle Recipe - Its called "Oriental Cole Slaw". Four (4) packages of either Oriental Ramen Noodles or you can use the Shrimp one. Crush them into small pieces then toast them in the oven until they get golden brown (not burnt) at 400 degrees. In a bowl, mix the seasoning packets from the noodle packs, 1/3 c. red wine vinegar, 1/2 c. sugar, 1/2 c. canola or veg. oil, 1/2 c. dark sesame oil (can be bought at Marc's). Mix 2 bags already cut cabbage (I use angel hair), seasoning mixture, toasted noodles, cut up as many green onions as preferred. OPTIONAL: sesame seeds and toasted slivered almonds. Better make A BIGGGGG BUNCH - goes fast at gatherings!!!!!!!!!!

      Good morning, Tracey, I am sure you are aware of the possible price increase with Laketran. The far would go up to $4.00 for buckeye holders and double that if going out of Lake County. Laketran is a great service to the elderly and disabeled, which I am one. Laketran has always had great, courteous service from their drivers. There are 2 Public Hearings left out of 4. They are (Tonight) Wednesday, 4/1/2009 7:00PM, wickliffe Civic Center 900 worden Rd, wickliffe Thursday 4/2/2009 Morley Library 184 Phelps Avenue, Painesville. These are very important meetings to us riders as well as the druivers of Laketran, they propose to cut Saturday ridership. I will be at the Morley Library meeting, I lead a Multiple Sclerosis Group. and this affects me as Laketan is my only way to get to appointments, as well as others.       i love watching the fox 8 news every morning with wayne and tracy every day i wake up at 4 and start watching you 2 until the news is done you guys look nice all the time you guys are fun to watch love you guys i live in beach city ohio and just keep up the good work and i would like it if you could have pat brady to wish my grandson a happy 1st birthday wich was march 16 thank you

      You, Stefani and Wayne are the reason I watch Fox 8 in the morning. Oh yea,. and Kenny. I really hate to leave anyone out, because everyone at Fox 8 really bring something to the table.

      Hello Ms. McCool! Great to find your fan site here. Too bad Frank doesn't appreciate your smile. Pat Brady says "Everything is always better if you do it with a smile." IMO, with all the anger, bad news, and disgruntled people in the world the last thing I want to see in the morning is someone dramatizing gloom and despair. Fox8 in the AM is on right next to my pot of coffee in the morning, and when you and your crew are there with a smile, I am always informed, and it always a Good Morning. Now it's my turn to say, "Have A Great Day."

Married with 2 girls, 21 & 12 yrs. old, and 2 boys 26 & 23 yrs old. Our daughter Elizabeth is a junior @ Baldwin Wallace College in Berea, Oh.
